Recipe: Sunshine Acai Bowls
/Sunshine Acai Bowls are a delicious way to start your day or incorporate a healthy meal into your and your family’s routine. A fun thing about acai bowls is, you can pretty much add in whatever fruits and nuts you like and be creative. This is also a great meal to let the kids build themselves by placing ingredients into serving bowls and letting children fill bowls with toppings they like, much like an ice cream sundae. Acai is also a much healthier alternative to ice cream (however, I’m not against the occasional ice cream!) and great for the summer months.
Here’s what I like to put in mine:
- Sambazon Acai Berry Superfruit Packs (they usually come 4 to a bag at Whole Foods)
- ¼ Cup of Granola
- 1 Tablespoon of coconut flakes
- 1 Apple cut into pieces
- 1 Banana (1/2 for blending and the other 1/2 for topping)
- 1 Kiwi
- 1-Cup Frozen Strawberries, Raspberries, Blueberries, and Blackberries
- Drizzle of Honey
- Dash of Cinnamon
I usually blend the acai in the Vitamix with a banana, ice, water and frozen berries. It can be tricky to get the consistency right so add water and ice to make a smoothie type consistency. Not to worry if you get it a little too soupy I just add toppings and eat like cereal, it’s still delicious.

Acai is a berry primarily found in the amazon rainforest of Brazil. Indigenous people have eaten it for thousands of years for its many health benefits. It has now become a popular super food among the health conscious for its impressive vitamin and mineral profile, healthy fats and 19 amino acids (impressive). As you know, no food alone is going to make you instantly healthy by just consuming it so be sure to incorporate this little gem into your already healthy lifestyle.
